Crunchy Granola
























Crunchy Granola

3 cups rolled oats
1/2 cup milled flaxseed
1 cup dried, sweetened coconut
1/2 cup chopped walnuts
1/2 cup slivered almonds
1/2 cup chopped dried apricots
1/2 cup chopped dried papaya
1/4 cup vegetable oil
3/4 cup honey
1 1/2 teaspoons vanilla extract

Preheat oven to 325 F.

In a large bowl, mix all dry ingredients. *This is actually a really important step because if you don't mix them prior to adding the liquid, the coconut and dried fruits can become lumpy and make it hard to distribute the coating equally.

In a liquid measuring cup, measure out the oil and honey, and then add in the vanilla extract. Pour over dry ingredients and mix well to combine, until all parts of the granola are equally covered.

Transfer to a large baking sheet lined with parchment paper and bake for 25-30 minutes, stirring the granola every 7-10 minutes as to ensure even cooking without burning. Serve plain fresh out of the oven, or in the morning with milk or on top of your favorite yogurt.
