Strawberry Banana Oatmeal Bread



























I'm always on the lookout for different ways to use overripe bananas, and since we had both bananas and strawberries, I thought why not try this favorite combination of mine...Add in some oatmeal and you've got a tender and moist bread, just waiting to be slathered with cream cheese and devoured.

Strawberry Banana Oatmeal Bread

1 cup all purpose flour
1/2 cup whole wheat flour
1/3 cup sugar
1/3 cup brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
3/4 cup quick oats
2 ripe bananas
1/2 cup fresh strawberries, chopped
1/3 cup buttermilk
1/4 cup vegetable oil
1 1/2 teaspoons vanilla
2 large eggs


Preheat the oven to 350F and grease/butter a loaf pan.

Mash bananas in a medium sized bowl to your desired consistency (I still like them a little lumpy, it gives the bread a good texture). Then, add the buttermilk, oil, vanilla and eggs. Whisk to combine and make sure all of the ingredients are incorporated nicely.

In a large bowl, combine all of the dry ingredients until they are mixed together as well. Make a well in the center to add the wet ingredients. Stir the ingredients together well, but be careful not to overmix. Finally stir in the strawberries then pour the batter into the loaf pan. Bake for 50 minutes or until a knife comes out clean!
