Greek Orzo



















Disclaimer: this side dish tastes, and in actuality, looks about one million times better than the picture puts forth. Thanks to my 'amazing' camera...yeah. But really, if you love feta and tzatziki then this orzo salad is the one for you. I truly am a sucker for some good tzatziki; the chunky surprise of cucumbers, fresh dill and creamy greek yogurt, what's better than that? The Greeks sure know what's up. And if you can't tell, after my recent discovery I'm currently head over heels for feta...I'm falling pretty hard for this baby.

Greek Orzo

2 cups orzo, cooked to al dente
1 tbs. olive oil
zest of half a lemon
salt and pepper to taste
2/3 cup prepared tzatziki
1/4 cup fresh chopped basil
1 pint cherry tomatoes, halved
1/4 feta cheese

For this one step recipe, combine all ingredients sans feta in a large bowl and stir carefully as to not crush the delicate, tiny tomatoes. Garnish with feta crumbles and dig in!
