Cucumber Avocado Salsa



























Now it's a known fact that us Arquiette's love some good guacamole or some avocado atop our salads at dinner, but after a week of plain avocado in our salad I figured it was time for an update. I give you: cucumber avocado salsa. Tangy, salty, creamy, crunchy and refreshing. Alongside some grilled chicken and creamy noodles, what more can you ask for?

Cucumber Avocado Salsa

1 ripe avocado, diced
1 English cucumber, quartered lengthwise and diced
1 shallot, finely chopped
zest of 1/2 a lime
juice of a lime
1/2 tsp. salt
1/4 tsp. black pepper
2 tablespoons fresh cilantro

Another easy one-stepper, combine all ingredients and refrigerate for about 30 minutes to let all the juicy goodness marinate before digging in!

*Disclaimer: if you think I'm getting away with too many one steppers just wait until you see the cookies I made last night, or the dinner/dessert that's coming up for Daddio's birthday- you might need an hour to read those babies.

**And a side note: quick and easy dinner- buffalo chicken quesadillas with gorgonzola cheese. Delish.
