Red Velvet Cake Balls






















First, I have to confess that I didn't have the time to make the red velvet cake...so I had to resort to the boxed kind. It actually quite makes for a funny story, because while I'm browsing blogs and websites searching for recipes, or flipping through the pages on tastespotting/foodgawker, I always get so annoyed when I see recipes where people used boxed brownie mix for their brownies, or a store bought crust. I mean really, if you're going to write about it and make it truly amazing, why would you even consider using boxed?!

Like I said though, this dessert was somewhat pressed for time as I had to make them the day before my friends birthday cook out. And, I figured since I'll be surrounded by other people my age, they won't really notice the difference as they're chowing down these amongst other goodies. So that's my excuse- I hope it's good enough..

Back to the cake balls though, these are the absolute perfect little treat to throw together in the nick of time, and both taste and look amazing. I mean, what could be easier (and more fun might I add) than baking an easy cake, crumbling it was icing and then dipping it in melted chocolate? Yeah...that's what I thought.

Red Velvet Cake Balls

1 baked/cooled red velvet cake
1 tub cream cheese frosting
1 cup semisweet chocolate chips
1 cup white chocolate chips

After the cake has cooled completely, crumble it into small bits in a large bowl. Stir in the cream cheese and mix until combined. Take tablespoon amounts at a time (or bigger/smaller depending on your desired size) and roll into balls. Place onto a cookie sheet lined with wax paper. After forming all of the balls let set in the fridge for 4-5 hours, or speed this up by putting in the freezer for 20 minutes. Then, simply melt the chocolate in separate bowls and go to town dipping and placing back on the sheet, you can even mix it up and decorate them how you choose. After completing all of the cake balls, place back into the fridge until firm. Enjoy!
